Life, life is wack. In it we go through highs and lows. When you are high you feel like the world is yours, but when your low, life is he polar opposite. Top that with flare ups that can be induced by stress and the lows can seem to be even lower. Sometimes all you can do to hold on to the thought of the highs in life is do something that you love. It can be HARD sometimes. Trust me I know more than anything but it does help…
Two things that I have learned to latch onto to are cooking and gaming. Cooking a nice homemade meal and then sitting down to relax and possible finish a few quests in Skyrim are things that I can always hold onto.
Life right now has been rough… there’s a lot going on. Last night because of that I did what I seem to do best anymore and went to my funny looking kitchen and whipped up a recent favorite of mine, french onion soup. It’s super easy cheap and great for a mid-flare food. The recipe is as follows…
FRENCH ONION SOUP
- 4 onions (whatever you have mix it up)
- 2T vegetable oil
- 2T Butter
- 1T Flour
- 3T Soy Sauce
- 3c Beef Stock
- Oregano
- Basil
- Bread (I use potato)
- Cheese
- Chop the onion into long strips. I go lengthwise with the grain of the onion. Add them to a saucepan with the butter and oil. Put this on low heat and allow to sit mixing around every ten minutes for around an hour or until the onions are caramelized and golden.
- Add the flour to the onions and let sit for 1-2 minutes.
- After that add the soy sauce to the mixture and combine together. Follow by adding the stock and herbs, then just forget about it for roughly 30 minutes.
- While the soup is simmering I put the bread on a sheet pan under the broiler on high and allow it to get crispy.
- When the soup is done and the bread is crispy put the soup into an oven safe bowl, top with bread, and then add the cheese on top.
- Put this on a sheet pan and place back in the oven until the cheese is golden.
This for me is a comfort food, a little taste of home. I hope that you enjoy!
